Instructions

  1. Mix all sauce ingredients in a small bowl until cornstarch dissolves. Set aside.
  2. Heat oil in a hot wok. Add green beans and stir-fry over high heat, stirring frequently for 8 minutes. Beans should remain crisp-tender. Remove beans and drain on paper towels.
  3. Remove excess oil from wok, leaving about Β½ tbsp. Quickly stir-fry grated ginger, crushed garlic, and chili until fragrant (a few seconds).
  4. Add ground meat and cook over high heat, breaking up meat with a spatula. Stir-fry for about 5 minutes until browned.
  5. Pour in sauce mixture, stir well, and cover wok. Let simmer 2-3 minutes until sauce thickens.
  6. Uncover, add green beans back into the wok. Toss gently to coat beans with sauce. Adjust seasoning with salt if needed.
