  • 1 tbsp red wine vinegar (or sherry vinegar)
  • 3 tbsp fresh lemon juice
  • 1 tbsp unsalted butter
  • 1/4 bunch fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

  1. Cut wings into two segments. Rinse and pat dry thoroughly. Season evenly with salt and freshly ground black pepper.
  2. In a mortar and pestle or bowl, combine chili paste, ginger, garlic, smoked paprika, sugar, vinegar, and lemon juice. Pound or mix until smooth and well combined.
  3. Massage the marinade onto the wings thoroughly. For best flavor, refrigerate for several hours or overnight. If short on time, marinate at room temperature for 30 minutes to 1 hour. Remove from fridge 30 minutes before cooking.
  4. Arrange the wings in a single layer in a large ovenproof tray, avoiding overlap.
  5. Bake at 200°C (390°F) for 40 minutes.
  6. Check for excess fat in the tray; pour off most, leaving only a thin layer at the bottom.
  7. Increase oven temperature to 220°C (430°F) and roast for another 15 minutes until the wings are beautifully caramelized and browned.
  8. Remove from oven, add diced butter and chopped parsley to the tray. Shake the tray gently until the butter melts and coats the wings.
  9. Spoon some of the delicious sauce from the tray over the wings before serving.
