🥣 Ingredients

  • 1 small cauliflower (about 400 g), broken into florets and sliced
  • 1/2 onion, chopped
  • 1 large garlic clove, crushed
  • 50 g spicy chorizo, diced
  • 30 g almonds, chopped
  • 1 tablespoon butter
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon Spanish smoked paprika
  • 1 tablespoon lemon juice
  • A few sprigs fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

👩‍🍳 Instructions

  1. Slice cauliflower florets into smaller pieces for quicker sautéing. Any broken pieces are fine—they caramelize beautifully in the pan.
  2. In a wide pan or skillet, cook chorizo over low heat until it releases its fat. If needed, add a little oil to cover the pan bottom. Remove chorizo and set aside.
  3. In the same fat, add chopped onion and sauté for 1 minute.
  4. Add cauliflower, season with salt and pepper, and stir to coat with chorizo fat (cauliflower will turn slightly pink). Add 1 tablespoon water, cover, and cook over medium-low heat for 10 minutes, stirring halfway.
  5. Remove lid and add butter, crushed garlic, cumin, and smoked paprika. Stir well. Cover and cook another 5 minutes.
  6. If cauliflower is too steamed and pale, increase heat and sauté a few minutes uncovered until edges lightly brown.
  7. Toast chopped almonds in a dry pan until fragrant. Season with salt, pepper, and smoked paprika.
  8. Remove pan from heat and stir in toasted almonds, cooked chorizo, chopped parsley, and lemon juice. Mix well and serve immediately.
