Instructions

1. Prepare Sorrel

  • Wash sorrel leaves, remove thick stems, and cut into large pieces.

2. Sauté Vegetables

  • Heat oil in a pot over low heat.
  • Add onion, carrot, celery root, and parsnip.
  • Sauté gently until soft, about 10 minutes.

3. Add Potatoes and Broth

  • Add diced potatoes, chicken or vegetable broth, and 3 cups water.
  • Season with salt and pepper.
  • Bring to a boil and cook until potatoes are tender, about 20 minutes.

4. Prepare Sour Cream Mixture

  • In a bowl, mix sour cream with flour.
  • Gradually whisk in 2–3 ladles of hot soup broth, one ladle at a time, mixing well.

5. Combine and Simmer

  • Lower heat so soup does not boil.
  • Slowly pour tempered sour cream mixture into the soup, stirring constantly.
  • Add sorrel leaves and simmer gently for 5 minutes without boiling to avoid curdling.
  • Stir in chopped dill.

6. Finish and Rest

  • Turn off heat, cover the pot, and let the soup rest to cool slightly before serving.
