Ingredients
- 500 g aged ribeye or beef tenderloin (approx. 4.5 cm thick)
- Coarse freshly ground black pepper
- A little olive oil

- Next day, remove from fridge and coat liberally with freshly ground black pepper. Rub the meat with oiled hands to coat evenly. Let rest at room temperature for about 1 hour.
- Preheat a grill pan over high heat without oil for 3 minutes.
- Sear steak for 4 minutes on one side, then flip and sear for 2 minutes on the other side.
- Remove pan from heat and flip steak again.
- Transfer the pan with the steak into a preheated oven at 200°C (390°F) for 10 minutes.
If your grill pan is not oven-safe, transfer steak to a preheated roasting tray.
