Ingredients

  • 4 medium potatoes
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. Wash the potatoes well with a sponge and dry thoroughly with kitchen towels.
  2. Slice the potatoes crosswise into very thin slices — but don’t cut all the way through! To make this easier, place a spoon on each side of the potato as a stop for your knife.
  3. Sprinkle salt and pepper over the potatoes.
  4. Melt the butter and mix with olive oil. Pour about 1 tablespoon of the butter-oil mixture over each potato, making sure it seeps into the slices.
    *Optional: use flavored oil (garlic, chili, rosemary) for extra aroma.
  5. Bake in the oven at 220°C (430°F) for about 1 hour 15 minutes, or until the potatoes are crisp on the edges and tender inside. Check occasionally depending on potato size.
  6. Serve warm with extra butter or sour cream mixed with chopped green onions.
