Ingredients
- 150 g unsalted butter

- Β½ small jar berry jam (I used mixed forest fruits)
- Vanilla powdered sugar for dusting
Instructions
- Cream the butter and sugar together until smooth and fluffy.
- Add the egg and mix until fully incorporated.
- Stir in the ground hazelnuts and almonds evenly.
- Combine flour, cinnamon, and baking powder, then gradually add to the wet ingredients and mix until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Remove dough from fridge and let sit for 5 minutes to soften slightly for easier rolling.
- Lightly flour your work surface (I use parchment paper) and roll out the dough thinly.
Tip: Divide dough into two parts and roll out two sheets for easier handling. - Use a flower-shaped cookie cutter (or any shape you prefer) to cut cookies. On half of them, cut out a smaller shape in the center. Re-roll scraps to use all dough.
- Place the whole cookies on a parchment-lined baking tray and bake at 180Β°C (350Β°F) for 10-12 minutes.
- Bake the cut-out cookies next. While still hot, dust the cut-out cookies generously with vanilla powdered sugar.
- Let all cookies cool completely.
- Spread about 1 teaspoon of jam on each whole cookie and sandwich with a cut-out cookie, pressing gently to stick without disturbing the sugar dusting.
