🕒 Prep Time: 20 minutes
🍽️ Yield: 20 pieces
🔥 Calories: Approx. 53 kcal per piece (with 80% dark chocolate)
Ingredients
- 20 dried pitted dates (soft and slightly chewy, not overly dry)
- Natural, unsweetened 100% peanut butter
- 50 g dark chocolate (60-80% cocoa)
- 1/2 tbsp neutral-flavored oil (e.g., grapeseed oil)
- Maldon sea salt flakes
Instructions
- Using the natural slit on each date, carefully stuff about 1/2 teaspoon of peanut butter into each one.
- Tip: If peanut butter is chilled, it’s easier to handle when cold.
- Prepare the chocolate glaze: melt 35 g of dark chocolate over a double boiler. Remove from heat, add the remaining chocolate and stir until fully melted and smooth. Mix in the oil for a shiny finish.
- Dip each stuffed date into the melted chocolate, ensuring it’s fully coated. Use a fork to lift the date and gently tap the fork’s edge on the bowl to remove excess glaze.
- Place the chocolate-covered dates on a parchment-lined tray. Chill in the fridge for 10-15 minutes until the chocolate starts to set.
- Sprinkle a pinch of Maldon sea salt on each date.
- Let the chocolate fully harden in the fridge before storing in an airtight container. Keep refrigerated overnight for best texture.
💡 Tips
- Use quality, plump dates for the best texture and flavor.
- The balance of salty and sweet enhances the chocolate and peanut butter flavors.
