Ingredients

Chicken:

  • 500 g boneless chicken thighs (about 4 pieces)
  • 2 tbsp Greek yogurt (10% fat)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt to taste

Shaurma Spice Mix:

  • 1 tbsp ground black pepper
  • 1 tbsp ground allspice (jenjibre)
  • ¼ tsp ground cumin
  • ¼ tsp ground coriander
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cinnamon
  • 1 tsp turmeric
  • ½ tsp chili flakes (optional)

Olive & Feta Salsa:

  • 50 g green olives (pitted)
  • 50 g feta cheese (or creamy sheep cheese)
  • 1 semi-spicy Bulgarian pepper
  • 3 sprigs fresh parsley
  • 4 tbsp extra virgin olive oil
  • Freshly ground black pepper

Instructions

  1. Mix the Shaurma spice ingredients; you’ll have extra—store it in a jar for future use.
  2. Cut each chicken thigh into 3-4 pieces.
  3. In a bowl, combine yogurt, olive oil, lemon juice, ½ tbsp of the Shaurma spice, salt, and 3-4 tbsp water to create a fluid marinade.
  4. Add chicken pieces and coat well. Marinate for at least 1 hour or overnight in the fridge.
  5. Thread 4-5 pieces of chicken per metal skewer.
  6. Heat a grill pan over high heat for 5 minutes, no oil. Reduce heat to medium-low and place skewers spaced apart. Grill about 4 minutes per side until golden and cooked through, then 30 seconds on each lateral side.
  7. Remove cooked skewers and cover loosely with foil to rest.
  8. For the salsa, chop olives into halves and thin slices. Finely dice parsley and pepper. Combine with olive oil. Crumble feta cheese and season with black pepper; mix gently.
  9. Serve warm chicken skewers with olive-feta salsa and Lebanese flatbread.
