CEREAL, HONEY & NUT COOKIES — DAIRY & EGG FREE, VEGAN FRIENDLY

These wholesome cookies combine oats, nuts, and natural sweeteners without any milk, butter, or eggs. Perfect for fasting, vegetarian diets, or anyone with allergies to dairy and eggs. Inspired by Leonor’s spritz cookies, this version adds extra flavor while using white flour and reduced oil for balance.

Ingredients

  • 100 g rolled oats
  • 90 g almonds (or any nuts; I used cashews)
  • 80 g brown sugar
  • 50 g rye flour
  • 40 ml extra virgin olive oil
  • 40 g honey
  • 2 tbsp lemon juice
  • 50 ml orange juice
  • A pinch ground nutmeg
  • A pinch ground cinnamon

Instructions

  1. Grind the oats in a coffee grinder until flour-like. Grind the nuts coarsely, leaving some visible pieces.
  2. Mix all dry ingredients together: oat flour, nuts, rye flour, and brown sugar.
    Note: I used white flour instead of rye, so I reduced the oil to 20 ml.
  3. Add the remaining ingredients and stir until combined. The dough will be slightly sticky.
  4. Form small balls from the dough and place them on a parchment-lined baking tray. If the dough sticks to your hands, wet your hands every 3-4 balls.
  5. Flatten the balls gently with the bottom of a glass, wetting the glass if dough sticks.
  6. Bake at 180°C (350°F) for 14 minutes. The cookies will be soft when baked but firm up nicely once cooled.
    Note: The original recipe called for 200°C, but that caused slight burning and hardness. Lowering to 180°C produced better results.
