🍽️ Ingredients

Pork tenderloin roll

  • 1 pork tenderloin (approx. 500 g)
  • 100 g goat cheese (matured if possible)
  • 150 g thin bacon slices
  • 8 large basil leaves
  • 2 tbsp olive oil
  • 1 tsp brown sugar (heaped)
  • Salt, freshly ground black pepper, chili flakes

Roasted tomatoes

  • 500 g Roma tomatoes (plum type)
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Sea salt

👩‍🍳 Instructions

For the roasted tomatoes:

  1. Cut Roma tomatoes lengthwise in half. Sprinkle with sea salt, drizzle with olive oil and balsamic vinegar.
  2. Place cut side up on a baking tray and roast in preheated oven at 160°C (or 140°C with fan) for over 1 hour, until half-dehydrated—dry on top but still juicy inside.
  3. Tomatoes can be roasted a day ahead and refrigerated in a bowl. Use leftovers in salads, salsas, or as a snack with cheese.

For the pork roll:

  1. Remove tendons and white membranes from the tenderloin. Butterfly the tenderloin into a thin, even sheet by making successive 1 cm deep cuts and unfolding/rolling it out flat (see video tutorial linked). Optionally, gently pound with a meat mallet for uniform thickness.
  2. Season both sides generously with salt and freshly ground black pepper. Let rest at room temperature for about 30 minutes.
  3. Chop roasted tomatoes and goat cheese into small pieces.
  4. Crush basil leaves with a pinch of sea salt in a mortar, then mix with olive oil.
  5. Spread tomatoes evenly over the tenderloin, leaving a 1 cm margin. Sprinkle goat cheese over the tomatoes, then drizzle basil oil on top.
  6. Roll the tenderloin tightly into a log.
  7. Lay bacon slices side by side on your work surface. Place the rolled tenderloin at one end and roll tightly in bacon slices. Secure ends with toothpicks to prevent drying out.
  8. On the work surface, mix brown sugar, black pepper, and chili flakes. Roll the bacon-wrapped tenderloin in this mixture to coat.
  9. Place the roll in a roasting pan or baking tray. Bake at 220°C for 20–25 minutes. Then switch the oven to grill mode and cook a few minutes until the bacon crisps and browns.
  10. Remove from oven, cover loosely with foil, and let rest for at least 10 minutes before slicing.

Serve immediately or reheat gently in the oven.
