Ingredients

  • 4 eggs
  • 100 g salmon fillet (skinless)
  • 2 tsp capers (rinsed if salted or drained if in vinegar)
  • 2-3 sprigs fresh dill, finely chopped
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Preheat a 16 cm (6-inch) skillet over medium-low heat with olive oil.
  2. Place salmon pieces in the pan and sear about 1 minute per side until just cooked. Remove salmon to a plate and flake with a fork. If excess fat remains, drain it from the pan. Return flaked salmon to the skillet.
  3. Beat eggs with salt, pepper, chopped dill, and capers. Pour egg mixture evenly over the salmon in the pan without stirring.
  4. Cook on stove for about 1 minute until edges begin to set.
  5. Transfer skillet to preheated oven at 190°C (375°F) and bake for 10 minutes, or until set when tested with a knife.
  6. Serve warm or at room temperature, ideally alongside steamed broccoli.
