This apricot jam captures the fresh fruit aroma with a vibrant orange color that will brighten your winter memories. Soft, fragrant apricot pieces make it perfect for breakfast with butter, stirred into yogurt, or as a crepe filling.

Ingredients

  • 3 kg ripe apricots (slightly soft and fragrant)
  • 1.25 kg sugar
  • 1 lemon (juice only)

Instructions

  1. Wash and drain apricots well. Halve and pit them, yielding just over 2.5 kg of fruit.
  2. Use a large wide pot (30–35 cm diameter) to ensure shorter boiling time and better shape retention.
  3. Cover apricot halves with sugar and let macerate at room temperature for 1 hour. Sugar will moisten but not fully dissolve.
  4. Add lemon juice and cook on low heat. Apricots will release juice, sugar will dissolve slowly. After about 20 minutes, apricots will be covered with syrup. Stir gently and sparingly (2-3 times max) to dissolve sugar on top.
  5. Once boiling starts, cook for 1 more minute.
  6. Strain apricots from syrup and let drain for 10 minutes to collect as much juice as possible.
  7. Return strained syrup to the pot and bring to boil. Simmer on medium-low for 10 minutes, skimming off thick foam. Do not stir.
  8. Add apricots back to the boiling syrup and cook for 20 minutes at medium-low heat until apricot pieces become translucent and color intensifies. Syrup will still be somewhat thin but will thicken after cooling.
  9. Pour hot jam into sterilized hot jars (sterilize jars 20 minutes at 200°C). Wipe jar rims clean, seal tightly.
  10. Invert jars and let stand on lids for 10 minutes to create vacuum.
  11. Wrap jars in a blanket to cool overnight in a dry draft-free environment.
  12. Store in a cool place such as cellar or pantry.
